
Tortilla / Nacho chips
Nachos chips or tortilla chips from scratch is fairly easy to make and makes a great snack for kids and adults alike.
Nachos as we call in India is basically fried tortilla chips made of maize flour. It is so popular with children and adults that it makes it as a starter in the menu in almost every restaurant in Mumbai. Generously loaded with the cheese sauce and sometimes with beans, jalapenos among other options disappears as quickly as it comes to the table.
Combined perfectly with my pumpkin cheese sauce, these chips won’t last long and soon everyone, be it your family or your guests, will be asking for more. It is a time consuming recipe but fairly easy one to make so go ahead, make a batch and let me know how it turned out.

Nachos chips or tortilla chips from scratch is fairly easy to make and makes a great snack for kids and adults alike.
Ingredients
- 1 ½ cups of maize flour (makke ka atta)
- 1 cup plain flour
- 1 tsp taco seasoning
- 3 tbsp oil
- ½ cup warm water or more as needed
- Salt to taste
- Oil for frying
- 3 tbsp nutritional yeast
Method
- In a bowl, whisk maize flour, plain flour, taco seasoning and salt.
- Add 3 tbsp of oil and combine it well.
- Add ½ cup of warm water to bring the dough together. If required, add 1 tbsp of water at a time to make a smooth, pliable dough.
- Keep it aside for at least 30 minutes.
- In a small bowl, place the nutritional yeast and a pinch of salt. Mix well and keep it aside.
- Grease your hands and knead the dough for 5 minutes.
- Now, divide the dough in 8 equal portions and cover it under a clean napkin.
- In a frying pan, add oil and put it on a medium flame.
- Working with one dough at a time, roll it in a thin circle.
- Fork the entire surface of your prepared roti and cut in triangles.
- Deep fry the triangles at a medium heat until golden.
- Remove the chips out of a frying pan with a slotted spoon.
- Sprinkle the nutritional yeast and salt mix over the chips and let it cool.
- Store the chips at room temperature in an air tight container.
Notes
- Fry the chips at a low to medium flame as they tend to turn brown quickly.
- Toss the chips with nutritional yeast and salt while they are warm so that the chips get coated evenly.
- Nutritional yeast is an additive that is used in foods to achieve the umami flavour replicating the cheese. It is considered as a highly nutritious vegan food product. If you can’t find nutritional yeast, you can sprinkle some taco seasoning or chaat masala to achieve a differently flavoured nachos.
- You can store these chips at room temperature in an air tight container for a month.
