
Palak paneer sandwich (Spinach and paneer sandwich)
Super quick melt in the mouth paneer stuffing in the spinach loaf makes a delicious palak paneer sandwich!!
This is one of my husband’s favourite sandwich to eat and for me to make! Coriander-mint chutney is a staple at my home and therefore you will always find it in my fridge. So, when bored to cook or can’t think of something quick, this sandwich comes to rescue.
Extremely fresh, flavourful and full of herbs, this is one of our BEST sandwiches to eat as a meal or even as a snack. The stuffing has few ingredients so it is matter of minutes before I have it on the table.
This sandwich is best eaten without grilling or toasting as the freshness of the mint comes through beautifully with a freshly baked sandwich loaf slice. And when it comes to bread, I am all about baking one at home. So, enter my spinach sandwich loaf/spinach Pain de Mie. Nothing fancy there, just a simple whole wheat + plain flour sandwich loaf that comes together with the fresh spinach puree that tastes as good or better than the store bought sandwich sliced loaf.

A freshly baked loaf, vibrant green coriander-mint chutney and a super quick paneer stuffing is a combination you won’t regret making. Take my word for it 😀

Super quick melt in the mouth paneer stuffing in the spinach loaf makes a delicious palak paneer sandwich!!
Ingredients
- For the paneer stuffing:
- 500 gm paneer, grated
- 1 large capsicum, finely chopped
- ½ cup mint, washed and dried
- ½ cup peas, frozen or fresh
- 2 tbsp green chili + ginger paste
- 1 tsp black pepper powder
- Salt to taste
- For the coriander-mint chutney:
- 1 cup coriander leaves with roots, washed and dried
- ¼ cup mint leaves, washed and dried
- 5 green chilies
- 1 large garlic
- ½ inch ginger
- ¼ cup sev/bhujia, plain
- 20 curry leaves
- 1 tbsp lemon juice
- Salt to taste
- 2-3 tbsp ice cold water
- Butter as needed to apply on the slice of bread
- Spinach loaf cut in slices
Method
- For the stuffing:
- Put a pot of water to boil.
- Add salt and place the peas in the water and cook until tender.
- Drain and keep it aside to cool.
- In a bowl combine paneer, finely chopped capsicum, peas, green chili +ginger paste, black pepper powder and salt.
- Tear mint leaves with your hands and mix it with the paneer mix.
- Combine it well and adjust the seasoning.
- For the coriander-mint chutney
- Combine coriander roots, chilies, garlic, ginger, curry leaves, sev/bhujia in a blender or a chutney jar and grind it a coarse paste.
- Add coriander leaves, mint leaves, salt and ice-cold water and grind it in a chutney.
- Add lemon juice and give one quick pulse
- Remove in a container and keep in the fridge till ready to serve.
- Compile the sandwich:
- Apply butter on the slice of the spinach loaf.
- Next, slather the slice with the coriander-mint chutney
- Generously put the stuffing over the chutney slice and cover it with another slice slathered with butter + chutney.
- Serve immediately
Notes
- You can use peanuts as an alternative to sev/bhujia.
- Use the creamiest paneer you can find for this stuffing. Frozen paneer works as well however the texture can be more coarse than creamy.
- The coriander-mint chutney can be stored for 3-4 days.
- To keep the fresh vibrant colour of your coriander-mint chutney, use ice cold water to grind it. Another trick to keep it vibrant green is not grinding it too much. Since all the aromatics are already in a paste form, few seconds of churning should turn the herbs in a paste.
- The paneer stuffing is best eaten fresh or within a day.
- I would strongly recommend to use lots of mint for this stuffing as mint, chili-ginger paste are the flavour carrier in this stuffing.
