Masala penne with the secretly healthy pumpkin cheese sauce is easy to make and delicious to eat.
Having made the healthy cheese sauce, I had to combine it with the pasta isn’t it? It is a fairly easy recipe too. Combine pasta with the veggies, throw in some masalas, pour the secretly healthy cheese sauce and you have a gorgeous golden pasta ready to serve.
This recipe can be customized as well:
- Use any pasta of your choice. Shell, elbow, rigatoni would be great options as they ‘carry’ the creamy sauce well.
- I have made a basic sauce here for the lack of veggies in my fridge 😀 however, you can add any or all of these veggies:
- Zucchini
- Sun dried tomatoes
- Olives
- Mushrooms
- Corn
- Broccoli
- And lastly, sprinkle some pav bhaji masala, kasoori methi, generous sprinkling of corinader leaves or roasted cumin powder to add that oomph to your masala pasta.

Masala penne with the secretly healthy pumpkin cheese sauce is easy to make and delicious to eat.
Ingredients
- 1 cup penne
- 2 tbsp butter
- 1 medium onion chopped finely
- 2 cloves garlic chopped finely
- ½ capsicum chopped in cubes
- 1 large tomato chopped in cubes
- 1 tbsp tomato paste
- Spices:
- ½ tsp turmeric
- 1 tsp red chili powder
- ¼ tsp dry basil
- ¼ tsp dry oregano
- Salt to taste
- 1 cup of healthy cheese sauce
- For garnish:
- Grated cheese
- 1 green onion chopped finely
Method
- Boil the pasta:
- Bring the large pot of water to boil and add salt
- Add the penne to the boiling water and cook till just done.
- Drain the water and keep it aside.
- Make the masala sauce:
- In a pan, add butter and once slightly melted, add the finely chopped garlic.
- Sauté for 20 seconds and then add onions.
- Cook the onions till slightly pink.
- Add capsicum and tomato with the masala and cook till tomato turns mushy.
- Add tomato paste + ½ cup of water and simmer for 5-7 minutes.
- Combine the elements:
- Add pasta to the masala sauce and combine to coat evenly.
- Pour the cheese sauce and toss well.
- Grate cheese and garnish with green onions
- Serve hot.
Notes
- You can substitute dry basil and oregano for Italian seasoning as well.
