You are going to be super surprised when you hear the main ingredient of this cheese sauce. Its pumpkin!!!!
Cheese sauce and that too with pumpkin? Sounds weird? It did to me too until I made it and it just turned me over. It looks like cheese sauce, it tastes like cheese sauce but wait, it is not all flour and cheese. It has got loads of pumpkin making it a secretly healthy sauce 🙂
Just in case I was biased, I mixed this sauce with some pasta and had my neighbour do the taste test and she was surprised that I was asking her to taste mac n cheese! 🙂
It is so delicious; my son insists on taking it for his lunch every once in a while, with the nachos or even combined my masala penne. It is a fairly easy recipe with few ingredients and is a perfect way to feed in some vegetables to your children.

Cheese sauce that is creamy and cheesy and secretly healthy! 🙂 Make pasta with it or serve it with chips, you will be amazed how perfectly delicious this sauce is.
Ingredients
- 3 cups diced pumpkin
- 1 ½ cup full fat milk
- 1 fat clove of garlic
- ½ cup cheddar cheese grated
- 1 tbsp of nutritional yeast (optional)
- ½ tsp Italian seasoning
- Salt and pepper to taste
Method
- Cook pumpkin with 1 clove of garlic and 1 cup of milk till it softens and turns mushy.
- Turn off the gas and add the remaining milk.
- Blend it all and strain it through a fine sieve to get a smooth sauce.
- Add cheese, nutritional yeast, Italian seasoning and combine it well.
- Season with salt and pepper.
Notes
- You may want to adjust the consistency of the sauce as it tends to thicken as it sits.
- You can also pressure cook the pumpkin with garlic and proceed with the remaining steps.
- Nutritional yeast gives the sauce that ‘cheesiness’ and can be omitted if you can’t get your hands on it.
- The sauce can be kept in the fridge upto 3-4 days.
