Super indulgent single serve orange chocolate cake with a gooey center that just melts in your mouth in less than 5 minutes from start to finish. It is eggless and dairy free (vegan) as well!
Ingredients
- Dry ingredients:
- 3 tbsp plain flour
- 1 tbsp cocoa powder
- ¼ tsp baking soda
- Pinch of salt
- Wet ingredients:
- 1 tbsp flavorless oil
- 1 tsp orange zest
- ¼ cup fresh orange juice
- 2 tbsp sugar
- 4 pieces of chocolate and orange bar
Method
- Combine plain flour, cocoa powder, baking soda and salt in a 300 ml mug with a fork.
- Mix thoroughly.
- Add the wet ingredients to the mug and mix again with a fork. Do not over-mix and ensure that no dry flour is remaining at the bottom.
- Press the pieces of chocolate and orange bar in the middle just so that it is just covered.
- Put the mug in the microwave for 40-55 seconds (Read notes)
- If you prefer a gooey center, remove the mug from the microwave at 40 seconds.
- For a lesser gooey center, microwave the mug for 55 seconds.
- Remove from the microwave and serve immediately to enjoy the gooey bits.
Notes
- It is important to work quickly once the orange juice hits the cake mix to ensure a moist cake.
- Flour tends to sink at the bottom so ensure that you take all the bits of the flour from the bottom of the mug.
- I have used Lindt’s Excellence Dark Intense Orange bar in this recipe to maximise the flavour of orange in the cake.
- Do use a fork as it will aerate the mix. It will also help pick up the flour bits from the bottom.
- All microwaves are different. My microwave is of 1100 watts and I baked it for 40 seconds and it was perfectly cooked with the gooey center. Do adjust the time and the power of your microwave based on this information to bake your mug cake.
- Do use a 300 ml mug for this cake as it will rise to the top.
- If you are after the gooey center, it is best to enjoy the cake immediately as it will continue to cook as it sits.
