
10 minute bajra – jowar dosa / Millet crepes

Bajra aka pearl millet and jowar aka sorghum are nutritionally dense millets and a quick Google search can tell you the benefits of including these millets in our daily diet.
Dosa is one of the most popular Indian food liked by all, young or old. And there can’t be a better way to use these millets than in a form of dosa. My version is quick, requires no fermentation, healthy and above all tastes delicious.
Since bajra and jowar lack gluten, spreading them like a smooth dosa can be challenge. Therefore, as indicated in the process, instead of spreading the batter in a smooth circle, pour the watery thin batter in a circular motion to get thin, crispy and lacy dosa. It cooks fairly quickly and comes off smoothly in a non-stick pan.

Ingredients
- Flours:
- ¼ cup jowar flour (sorghum flour)
- ¼ cup bajra flour (pearl millet flour)
- ¼ cup rice flour
- For the batter:
- 1 ½ cups thin buttermilk (½ cup yogurt +1 cup water)
- ¼ tsp cumin powder
- ½ tsp finely chopped ginger-chili paste
- 1 tsp coarsely crushed pepper (optional)
- Salt to taste
- Ghee as needed
Method
- Mix all three flours with a whisk and combine them well.
- Add buttermilk, cumin powder, chili-ginger paste, coarsely crushed pepper and salt to taste.
- Leave it aside for 5 minutes.
- Brush a non-stick pan with little ghee and bring it to a medium heat.
- Mix the batter well before pouring a ladle full over the pan in a circular motion.
- Cook on a medium flame till the edges turn brown.
- Flip the dosa and cook on the other side.
- Serve it immediately with chutney of your liking.
- Repeat the process to make dosa out of remaining batter.
Notes
- Always use freshly grounded bajra and jowar flour as the flours can turn rancid if kept for long.
- I would recommend storing both the flours in the freezer to maintain its freshness.
- This batter can be made 4-6 hours in advance. Make the batter and keep in the fridge till ready to use.
- Do stir the batter thoroughly before pouring it in the pan as the flours tend to sink at the bottom.
